
Burgers & Beers served five stories up in a rooftop train carriage overlooking Melbourne City - Beat that.
Easey’s is by far the biggest and best project I’ve ever taken on in my life. It really required me to draw on every but of experience and knowledge I’d learnt - in the design industry, the music industry, the hospitality world, and even from my time as a teacher - and I learnt more an more each day of the journey. To try and summarise everything we did as a team, or I did personally in the creation and evolution of this place is near impossible - the amount of small details and bits and bobs you’d need to do besides the big stuff, never ended. From creating a menu design, to creating a whole theme of colour for the building, table designs, marketing, social media, in house advertising, ordinating events, and artists, and actually curating art exhibitions, the list is truly endless. Being at the helm of this ship for 6 years, has truly given me the confidence to approach any project with deep belief in myself.
What started as three young men with an idea and big ambitions, relatively unknown in the hospitality scene, rolling the dice on a business with over a million dollars in liabilities before we’d opened the doors, I can proudly say, has resulted in the establishment of not one only of Melbourne’s favourite destinations, but a venue that has transcended it’s humble beginnings as a burger restaurant, into a tourist destination.
